Argentinian Alfajores de Maizena (Cornstarch Cookies)

These melt-in-your-mouth, delicate cookies are sandwiched with creamy, caramel-like Dulce de Leche and rolled in desiccated coconut. They have a soft, crumbly texture with a hint of lemon flavor. Perfect for any occasion, these alfajores are best made a day ahead to let the flavors blend.


Ingredients:

100g Butter (softened)

200g Cornstarch

100g Powdered sugar

1 tsp Baking powder

1 egg

Zest of 1 lemon

150g Dulce de leche

Desiccated coconut for rolling

 


Method:

1. Preheat oven to 180°C (350°F).

2. Mix cornstarch, powdered sugar, baking powder, and lemon zest.

3. Add butter, egg, and knead until dough forms.

4. Roll dough to 8-10mm thickness, cut into rounds.

5. Bake for 10-12 minutes, ensuring cookies are pale.

6. Once cooled, sandwich cookies with Dulce de leche and roll in coconut.
